CHICKEN CRUNCH 
2 c. cooked chicken, cubed
1 onion, chopped
3 celery stalks, diced
1/2 sm. red or green pepper, chopped
1 can sm. black olives, pitted
1 c. mayonnaise
2 tbsp. red wine vinegar
2 tbsp. half and half or cream
6-8 oz. Chinese dry noodles

Mix all ingredients except dry noodles. Put in a bowl; cover and marinate overnight in refrigerator. When ready to serve, add noodles and toss. Serve over lettuce leaves.

Great for a summer supper.
