BROCCOLI CREAM SOUP 
1 head of broccoli
1 stick butter
Onions or shallots to taste
2/3 c. flour
1 qt. milk
Salt & pepper to taste
1 qt. water

Boil head of broccoli in 1 quart water. In a separate pan, melt the butter. Simmer onions and the flour. When the broccoli is soft, mash it. Add 1 quart of milk to the broccoli, then add the flour mixture. Stir and simmer for a few minutes. Salt and pepper to taste, serve.
