VODKA PASTA 
1 1/2 lbs. pasta
7 tbsp. butter
1/2 tsp. hot, dried, pepper flakes
1 c. (less 2 tbsp.) Russian Vodka
1 c. canned Italian plum tomatoes
1 c. heavy cream
1 c. freshly grated Parmesan cheese.

1. Melt butter in a casserole or saucepan large enough to hold the pasta when it is cooked and drained.

2. Add the pepper flakes and vodka and bring to a boil. Let simmer two minutes.

3. Add the tomatoes and cream and bring to a boil. Let simmer five minutes. Add salt to taste.

4. When the pasta is cooked, drain it. Add it to the hot sauce. With the heat low, add the cheese and mix thoroughly. Serve immediately.
