VIDALIA ONION CASSEROLE 
5 lg. Vidalia onions, or any sweet onion
1/2 c. butter
1 c. grated Parmesan cheese
20 Ritz crackers, crumbled

Slice onions into thin rings. Melt butter in a large skillet and saute onions until limp or opaque. Pour half the onions into a 2-quart greased casserole. Cover with half the cheese and half the cracker crumbs. Repeat layers. Bake at 325 degrees uncovered for 30 minutes or until golden brown. Yield: 6-8 servings.
