SOFT WHOLE WHEAT BREAD STICKS 
2 1/2 c. whole wheat flour
2-2 1/2 c. white flour
2 pkg. yeast
2 tbsp. sugar
2 tbsp. oil
1 egg yolk
1 egg white

In large mixer bowl combine whole wheat flour, yeast, sugar, oil and 1 tablespoon salt. Add 1 1/2 cups warm water and egg yolk. Beat at low speed for 1/2 minute. Beat 3 minutes at high speed. Stir in enough white flour to make a stiff dough. Knead 5-8 minutes. Let rise to double.

Divide dough into 16 equal parts. Roll each piece into a rope 12 inches long. Place ropes on greased baking sheets, 2 inches apart. Add 1 tablespoon water to egg white. Beat until frothy. Brush egg mixture over the dough and let rise 30 minutes. Brush again with egg mixture, sprinkle with salt and Parmesan cheese if desired. Bake at 425 degrees for 12-15 minutes or until brown.

I cooked the first batch for 11 minutes at the recommended temperature, a bit too brown, still good. Second batch 25 degrees less and 10 minutes, still too brown. Thinking I need to adjust for high altitude. Really good though.
