DATE AND OAT BRAN MUFFINS | |
1 stick unsalted butter 1 1/2 c. chopped dates 1/2 tsp. vanilla 1 egg 1 c. oat bran 3/4 c. flour 4 tsp. baking powder 1/4 tsp. salt 1 c. milk 3/4 c. chopped pecans 1/4 c. oats Beat butter with dates until pea size. Beat in vanilla. Add egg and mix. In another bowl, combine oatbran, flour, baking powder, and salt. Add half of flour mixture to butter and dates and mix. Mix in half of milk, remaining flour and milk. Fold with spatula until batter just comes together. Will be lumpy. Fold in pecans. Spoon into lined muffin cups filling to just below the top. Sprinkle with oats. Bake 15 to 20 minutes at 400 degrees. Cool 5 minutes before removing. Serves 12. |
