EGGPLANT DELIGHT 
1-2 eggplants
1/2 c. seasoned bread crumbs
3/4 c. Parmesan cheese
1/4 c. mayonnaise
1 c. Easy Tomato Sauce
1 (8 oz.) pkg. mozzarella cheese

Wash eggplant (do not peel), cut into 1/2 inch slices. Combine bread crumbs and 1/4 cup Parmesan cheese. Spread mayonnaise on both sides of eggplant slices. Dip into crumb mixture. Bake on cookie sheet 425 degrees for 15 minutes.

Grease baking dish. Place eggplant slices, overlapping in dish. Spread 1/2 Easy Tomato Sauce. Place mozzarella cheese on top. Sprinkle remaining Parmesan cheese and spread remaining sauce. Bake at 375 degrees for 15 minutes.

EASY TOMATO SAUCE:

2 (6 oz.) cans tomato paste
3 cans water
1/2 tsp. basil
1/2 tsp. oregano
1 clove garlic
2 tsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper

Place ingredients in saucepan and heat 10-15 minutes. Use on Eggplant Delight.
