DIABETIC BANANA BREAD 
1 3/4 c. plain flour
1/2 c. sugar twin
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening (butter)
1 c. bananas (2 large very ripe)
2 eggs, slightly beaten
1/2 c. chopped nuts

Preheat oven to 350 degrees. Grease and flour 5 x 9 inch loaf pan. In large bowl with a fork, mix first 5 ingredients. With pastry blender, cut in shortening until mixture resembles coarse crumbs. With fork stir in banana and beaten eggs until blended. Stir in nuts. Spread batter evenly in pan. Bake in metal pan 55 minutes, when using glass dish reduce heat to 325 degrees or until toothpick inserted in center comes out clean.
