GREEK SALAD | |
1 cucumber, thinly sliced 2 vine ripe tomatoes, cubed 1/4 c. sliced scallions 8 ripe (black) pitted olives, thinly sliced 1 oz. Feta cheese, crumbled 1 tbsp. olive oil 1 tbsp. olive liquid (from can of olives) 1 tbsp. lemon juice 2 tbsp. water Combine cucumber, tomatoes and scallions in a salad bowl (or on beds of lettuce). Add olives and Feta cheese. Shake remaining ingredients and pour over salad. Makes 4 servings, under 100 calories each. |
