PERSIMMON COOKIES 
2 c. sifted flour (may use part whole wheat)
1 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/2 c. butter
1 or 1 1/2 c. sugar
1/2 tsp. nutmeg
1 lg. eggs
1 tsp. vanilla
1 tsp. orange rind (optional)
1 1/4 c. persimmon pulp
1 c. chopped nuts

Sift flour, soda, salt, nutmeg and cinnamon. Cream butter with sugar until light. Add egg and flavorings, blend. Stir in persimmon pulp, dry ingredients and nuts. Blend thoroughly. Drop by spoonfuls onto greased cookie sheet. Bake at 350 degrees for 15-20 minutes. Cool on racks. Yields 3-4 dozen. Variation: Add 1 cup raisins or chopped, pitted dates.
