SHORTBREAD COOKIES 
5 1/4 c. flour
1 1/2 c. cornstarch
1 lb. butter
1/2 c. butter
1 1/2 c. sugar

Sift flour and cornstarch together. Mix butter and butter together. Use separate bowls for each mixture. Gradually add the sugar to the butter mixture. Then add the flour mixture gradually, stirring until dough is well blended and soft. Spread on 12x17 cookie sheet.

Prick surface all the way through every inch or so with a fork. Bake at 325 for 1 hour. Watch last 10 minutes because it begins to brown rapidly when thoroughly baked. Remove from oven and cut into 1 inch squares. Cool in pan.
