SOFT GINGER COOKIES 
COOKIE:

1/2 c. butter
1 c. sugar
2 eggs
1 tsp. baking soda
1 tbsp. water
1 c. molasses
4 c. flour
1 tsp. ginger

FROSTING:

2 1/2 c. confectioners' sugar
1 tbsp. corn syrup
2 tbsp. softened butter
3-4 tbsp. hot water

In a mixing bowl, cream butter; gradually add sugar and beat until light and fluffy. Beat in eggs, one at a time. Dissolve baking soda in water; add to creamed mixture. Blend in molasses. Sift together flour and ginger; gradually add to creamed mixture. Blend in molasses. Sift together flour and ginger; gradually add to creamed mixture (do not over beat). Drop onto baking sheet 2" apart. Bake at 350 degrees for 12 to 15 minutes. When cool, frost. To prepare frosting: In a mixing bowl combine sugar, syrup, butter and water; beat until thoroughly blended. Makes 6 to 7 dozen.
