EASY PUMPKIN SOUP 
2 lbs. fresh pumpkin or 3 c. canned
3 c. boiling milk or coffee cream
1 tbsp. butter
2 tsp. maple syrup
1/8 tsp. nutmeg
1 tsp. salt
Other seasonings to taste

Steam the fresh pumpkin and mash or use the canned. Stir into the milk or cream. Add the remaining ingredients. Heat but do not boil and serve. 6-8 servings.
