WHOLE WHEAT MUFFINS 
1 c. all-purpose flour
3 tsp. baking powder
1 tsp. salt
1 c. whole wheat flour
2 to 4 tbsp. brown sugar
1 c. milk
1 egg
1/4 c. melted shortening
3/4 c. chopped dates (optional)

Add flour with baking powder and salt. Add whole wheat flour, brown sugar and dates; mix thoroughly. Combine and add milk, beaten eggs and melted shortening; mix quickly until dry ingredients are just dampened. Stir 3 or 4 times. Spoon into buttered muffin pans, filling 2/3 full.

Bake at 450°F for 15 to 20 minutes or until nicely browned. Dates may be omitted.

Makes 12 medium sized muffins.
