PEANUT BUTTER BANANA MUFFINS 
1 c. all purpose flour
1/2 c. peanut butter
3/4 c. oats (quick cooking or regular)
1/3 c. brown sugar
1 c. chopped pecans
1 tbsp. baking powder
1 c. milk
1 banana, mashed
1 egg, slightly beaten
2 tbsp. vegetable oil
1 tsp. vanilla

Preheat oven to 325 degrees. Prepare muffin tins, either grease or line with baking cups.

Combine flour, oats, brown sugar, pecans and baking powder; stir.

In a separate bowl mix together remaining ingredients. Add to flour mixture. Stir until all dry ingredients are moistened. Fill prepared muffin tins 3/4 full. Bake for 15 to 20 minutes. Makes approximately 12 full-size muffins, each containing 192 calories.
