LINDA'S CARROT CAKE 
1 c. sugar (or less)
1 c. oil
1 tsp. vanilla
3 eggs
1 1/2 c. flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/4 c. carrots, grated
1/2 c. walnuts, optional
1/2 c. raisins, optional

Preheat oven to 350 degrees. Mix sugar, flour, salt, baking soda, cinnamon in bowl. Add all ingredients, mix thoroughly. Pour into greased bundt pan for cake. Bake at 350 degrees for 1 hour.

FROSTING:

1 lb. confectioners' sugar
8 oz. cream cheese
6 tbsp. butter
2 tbsp. vanilla

Combine all ingredients. Spread on cake when cool. NOTE: This recipe call also be used for carrot muffins.
