1/2 c. butter, softened
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar, packed
1/2 c. carrots, grated
2 egg whites or 1 whole egg
1/2 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
2 c. oats

Preheat oven to 375 degrees. Cream butter, peanut butter and sugar until fluffy. Add carrots, eggs and vanilla, mix well. Beat in flour and soda. Stir in oats. Drop by teaspoonful on ungreased sheet. Bake 10 minutes, remove to rack.
