BANANA NUT LOAF 
1/2 c. butter
1 c. sugar
1 egg, beaten
2 c. sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. mashed ripe bananas
1/2 c. raisins, optional
1 c. chopped nuts, optional

1. Grease a 9x5x3 inch loaf pan.

2. Beat butter, sugar and egg in a large bowl until fluffy.

3. Combine bananas and milk in a bowl.

4. Sift flour, baking powder and baking soda onto wax paper.

5. Stir into sugar mixture alternately with banana milk mixture. Stir in nuts.

6. Turn into prepared pan.

7. Bake 350 degrees for one hour or until center springs back when lightly pressed with finger.

8. Cool in pan on wire rack for 5 minutes.

9. Take out of pan. Cool completely.
