BREAD FOR DIABETICS 
1 2/3 c. sifted flour
1 c. sugar substitute
3 tsp. baking powder
1/3 tsp. baking soda
3/4 tsp. salt
2 tbsp. melted butter
1/2 tsp. cinnamon
1 c. chopped nuts
1 egg, well beaten
1 c. unsweetened applesauce

Sift dry ingredients together into a medium mixing bowl. Stir in nuts. Mix together egg, applesauce and butter to dry ingredients, stirring just until blended. Pour into greased 9 x 5 inch loaf pan. Bake 50 minutes at 350 degrees until lightly brown.
