BANANA BREAD - DIABETIC 
2 1/2 c. unsifted all purpose flour
1 c. sugar
4 tsp. baking powder
1 tsp. salt
1/3 c. polyunsaturated butter
1 c. mashed ripe bananas
1/2 c. skim milk
2 egg whites (stiffly beaten)

Measure flour, sugar, baking powder and salt into bowl mixing well. Add butter, bananas, and milk. Mix at low speed of electric mixer for 1 minute. Pour into a 9 x 5 x 3 inch loaf pan and bake at 350 degrees for 55 to 60 minutes.
