MOMMA'S ZUCCHINI PATTIES 
1 1/2 cups grated raw zucchini
2 tbsp. minced onion
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour
2 eggs
2 tbsp. mayonnaise
1/4 tsp. oregano
salt and pepper, to taste
about 2 tbsp. butter

Press excess moisture out of grated zucchini between paper towels. Mix everything together, except butter to make the batter.

Melt butter in skillet. Spoon batter (about 2 heaping tablespoons per patty) into skillet. Flatten lightly with spatula. Cook over medium heat until nicely browned on both sides.

Serve plain or top with tomato or marinara sauce and grated Parmesan cheese.

Serves 4.

Made this exactly as directed (except salted zucchini down to get more water out of it) but first 4 were nothing but a runny mess that wouldn't brown. Added another quarter cup flour to remaining batter and that made a world of difference! That would be 3/4 cup flour for the whole recipe. Might add some hot sauce of some sort next time too.
