STEWED RICE 
1 oz. salt pork
2 z. lean ham
3 tbsp. oil
1 green pepper
3 sweet chili peppers
1 clove garlic
6 cilantro leaves (opt.)
1 onion
2 tbsp. tomato sauce
6 olives
2 tsp. capers
2 tsp. salt
Vienna sausage or 1/2 c. corn (opt.)
2 1/4 c. rice
2 1/4 c. boiling water

Brown salt pork and ham quickly in heavy kettle. Add oil, pepper, garlic, cilantro and onion and saute over low heat for 10 minutes. Add tomato sauce, olives, capers and salt and mix. Add Vienna sausage or corn and mix. Add rice and saute for 2 to 3 minutes. Add boiling water and cook over moderate heat until rice is dry. Turn rice from bottom to top. Cover and cook for 30 minutes at low heat.
