HAWAIIAN BANANA BREAD 
2 c. sugar
1 c. shortening
6 ripe bananas, mashed
4 well beaten eggs
2 1/2 c. cake flour
1 tsp. salt
2 tsp. baking soda

Cream sugar and shortening. Add bananas and eggs. Sift dry ingredients together three times. Blend wet and dry ingredients. DO NOT OVER MIX. Pour into two lightly greased and floured loaf pans. Bake at 350 for 45-50 minutes. This bread may be served immediately or stored several days before serving.

Substitution for cake flour: 1 cup minus 2 tablespoons of sifted all-purpose flour.
