GOLEBKI -- CABBAGE ROLLS 
1 head cabbage
1 lb. ground beef & 1/2 lb. ground pork
1 med. onion, finely chopped
1/4 tsp. each of pepper, salt & marjoram
1/2 c. partially cooked rice
1 egg
3 tbsp. butter

Wilt the cabbage leaf by leaf in boiling water into which 2 tablespoons of vinegar have been added. Drain. Cool in cold water. Pat dry. Slice off the top of the heavy rib. Saute the onion in just enough butter to make it transparent. Combine meats, egg, rice and seasoning. Spread 2 tablespoons on each leaf. Fold and roll. Put the rest of the butter in the frying pan with a little water and put the rolls in and simmer for 2 hours. Serve with mushroom sauce or sour cream.
