CREAMED BEEF & RICE CASSEROLE 
SAUCE:

2 tbsp. flour
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper
1 can Carnation evaporated milk

Blend flour, butter, salt and pepper in saucepan over low heat. Add evaporated milk. Stir until thick and smooth.

Mix together:

1/4 c. diced celery
2 tbsp. green pepper, diced
2 hard cooked eggs
1 c. cooked rice
1 1/2 c. chopped dried beef (2 jars) (rinse in hot water & drain)

Place beef mixture in casserole and pour cream sauce over. Top with grated cheese if desired. Bake at 350 degrees for 15 minutes.
