SCALLOPED POTATOES 
8 med. potatoes, pared & sliced
1/4 c. finely cut green pepper
1/4 c. minced onion
1 3/4 c. med. white sauce
2 tsp. salt
1/4 tsp. pepper

MEDIUM WHITE SAUCE:

4 tbsp. butter
4 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. milk

Preheat oven to 350 degrees. Grease 2 quart baking dish. Make alternate layers of potatoes, green pepper and onion in prepared baking dish. Combine sauce and seasoning. Pour over potatoes. Cover dish. Bake about 1 hour. Uncover and continue baking 30 minutes, until top has browned. Makes 8 servings.

WHITE SAUCE:

Melt butter in saucepan. Stir in flour and seasoning smoothly. Add milk slowly. Cook and stir continually over moderate heat until boiling and cooked to desired thickness. Remove from heat.
