PINEAPPLE UPSIDE DOWN CAKE 
1 pkg. yellow cake mix
2 large eggs
20 oz. can pineapple slices, save juice
1 pt. red cherries
10 tbsp. brown sugar
1 stick butter

Mix butter and brown sugar in cast iron deep fry pan on the stove. Spread evenly in bottom of pan. Remove from stove and place pineapple rings on top of mixture, placing a cherry in the center of each pineapple ring. In a large bowl, place cake mix, eggs and pineapple juice. Mix well, mixture will thick, heavy and fluffy. Spread on top of pineapple in cast iron pan.

Bake at 350°F for 25 to 30 minutes or until cake is golden brown and a toothpick stuck in the center comes out clean. Cool cake in pan for 5 minutes then turn over onto cake plate. Best served warm.
