ZUCCHINI BREAD 
3 eggs
1 c. oil
3 tsp. vanilla
3 tsp. cinnamon
1 tsp. salt
1 c. nuts
2 c. sugar
2 c. grated zucchini
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder

Beat eggs until light, add sugar, oil, zucchini and vanilla. Mix lightly. Add remaining dry ingredients and nuts. Mix by hand. Bake 1 hour at 350 degrees.

Makes 2 loaf pans. You can substitute rhubarb: Cook 5 cups cut up rhubarb and 1 cup sugar until tender. Use 2 cups of this sauce in place of zucchini. Also makes good muffins.
