TURKEY TACOS 
1 lb. ground turkey
1 pkg. Ortega taco seasoning
1 c. shredded Cojack cheese
shredded lettuce
1 pkg. corn tortillas or 1 pkg. soft flour tortillas
Fresh salsa

Cook 1 pound ground turkey over medium heat; drain. Add taco seasoning and 3/4 cup water and simmer for 5 to 10 minutes. Heat corn tortillas in oven or microwave. Soft shells for 25 seconds on high. Assemble tacos - meat, cheese, lettuce, and salsa. Serve. Turkey is lower in fat than ground beef and tastes terrific. No one will know the difference.

Fresh Salsa: 1 bell pepper (diced), 2 ripe tomatoes (diced), 1/4 cup diced onion, 1 small jalapeno pepper (seeded and diced, and 1 clove garlic (pressed or chopped). Mix and let stand for at least 1 hour.

Note: If you can't get fresh jalapeno peppers, substitute canned green chilies. Wash your hands after handling jalapenos as they are a skin irritant.

Since microwave ovens vary in power, you may need to adjust your cooking time.
