DATE BALLS 
2 eggs, well beaten
1 c. sugar
1 rounded tbsp. butter
1 1/2 c. snipped dates
1 tsp. vanilla
2 c. over popped rice cereal
1/2 c. chopped Brazil nuts
Flaked coconut

Blend eggs, sugar, and butter in a skillet or flat saucepan. Add dates and cook together for 10 minutes, stirring constantly. Remove from heat and stir in vanilla. Combine cereal and nuts in large mixing bowl. Add date mixture and mix well. Form into small balls about 1 1/2 inches in diameter and roll in coconut. Makes about 2 dozen. The date balls keep several weeks if stored in an air-tight container.
