Chicken on a Cloud - Recipe

CHICKEN ON A CLOUD

1 frying chicken, cut up
1/3 c. flour
2 tsp. salt
1/2 tsp. ground sage
1/4 tsp. pepper

Coat chicken with seasoned flour. Brown chicken in 1/4 cup oil or shortening. Place browned chicken into baking dish.

CLOUD
1 c. flour
1 tsp. baking powder
1 tsp. salt
3 eggs, well beaten
1 1/2 c. milk
1/4 c. melted butter

Combine eggs, milk and butter. Mix in flour, baking powder and salt. Pour over chicken. Bake 1 hour at 350 degrees.

I re-wrote this recipe years ago for my cookbook and added 1 box of thawed and squeezed spinach to the egg mixture and 3/4 c. of grated cheddar. Named it chicken Florentine. Great dish!!!!! Also can skip spinach and use 1/4 c. fresh chopped Tarragon.
