CHICKEN CROQUETTES 
1 pt. finely chopped chicken
1 tbsp. salt and pepper
1 c. cream of chicken stock
1 tbsp. flour
4 eggs
1 sm. onion, minced
1 tbsp. lemon juice
1 pt. cracker meal or bread crumbs
3 tbsp. butter

Make sauce from cream of chicken stock, flour and seasonings. Add 2 well beaten eggs. Add chicken and cool. Form into croquettes. Dip into crumbs then beaten eggs with tablespoon of water. Dip in crumbs again. Fry until a pretty brown. Drain on a paper towel and serve.
