GRANDMA SHIELDS' BEEF SALAMI 
5 lbs. hamburger
5 tsp. Morton Tender Quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. black pepper, ground
2 1/2 tsp. onion salt
2 1/2 tsp. garlic salt
1 tsp. (schilling) hickory smoke salt
1 tsp. cayenne pepper

Mix together well with your hands, cover and refrigerate 3 days, working with your hands each day. On the 4th day make into 5 rolls and cook in 200 degree oven for 6 hours. Keeps well for long time in refrigerator, or can be frozen.
