FRUIT FILLED COFFEE CAKE | |
1/2 c. butter 1 c. sugar 2 eggs 2 c. flour 2 tsp. baking powder 1/2 c. milk 1/2 tsp. vanilla 1 (18 oz.) fruit pie filling CRUMBS: 1/3 c. flour 1 tbsp. melted butter 1/4 c. sugar 1/2 tsp. cinnamon Preheat oven to 350 degrees. Cream together butter, 1 cup sugar and eggs. Sift together and add flour and 2 teaspoons baking powder. Add milk and vanilla. Beat 1 minute on medium speed. Mix together 1/3 cup flour, 1 tablespoon melted butter, 1/4 cup sugar and 1/2 teaspoon cinnamon. Pour 1/2 cake batter into 9 x 13 inch greased and floured pan. Add pie filling on top. Pour the other half of cake batter on top of pie filling. Add crumb mixture on top and bake 50 to 60 minutes or until done. |
