PICKLED PEACHES 
4 lb. sm. peaches (peeled with peeler), kept whole

SYRUP:

1 qt. cider vinegar
4 c. sugar
1 tbsp. whole allspice
1 tbsp. stick cinnamon, broken up
1 tbsp. whole cloves

Put allspice, cinnamon and cloves in cheesecloth bag.

Place all ingredients except peaches in 4 quart pan and bring to boil. Put in peaches and cook in syrup until it comes to a boil. Cook 5 minutes. Pack in hot sterilized jars. Pour sugar over and leave 1/4 inch head space. Seal. Water bath can for 5 minutes. Makes about 3 pints.
