PEACH PICKLES 
1 gal. peaches
6 to 8 c. sugar
1 ginger root
2 sticks cinnamon
1 tbsp. whole allspice (put in cheesecloth bag)
1 tsp. whole cloves (put in cheesecloth bag)
2 c. water
3 c. vinegar

Mix sugar, water, vinegar and spices; boil 3 minutes. Add peaches; cook until tender. Cook a little longer if not thick enough. Pack in jar while hot. Seal.
