FRESH RHUBARB CAKE 
1 egg, beaten
1 c. sugar
1 c. sour cream (sweet cream opt.)
2 c. rhubarb, finely chopped
1/4 tsp. salt
1 tsp. baking soda
1 3/4 c. flour
1 tsp. vanilla

TOPPING:

1/2 c. walnuts
1/2 c. coconut
1/2 c. brown sugar

Grease and flour 9"x13" pan. Preheat oven to 350 degrees.

Cream egg, sugar, sour cream, vanilla. Sift together salt, soda and flour. Combine the creamed and sifted ingredients. Add rhubarb last. Cover with topping. Bake in 350 degree oven for 35 minutes.
