STUFFED CORNISH HENS 
1 box wild rice
4 Cornish hens

WINE GLAZE:

1/4 c. red wine
1/8 tsp. pepper
1/2 tsp. sugar
3/4 tsp. salt
3 tbsp. butter, melted
1 1/2 tsp. lemon juice

Cook rice according to package directions. Salt and pepper hens. Stuff cavity of hens with rice. Place hens in shallow roasting pan and cover loosely with foil. Roast in hot 400 degree oven for 30 minutes. Uncover; baste with wine glaze and bake 1 hour more, basting occasionally with the glaze. Serves 4.
