EGGS SPRING STYLE 
4 hard cooked eggs
1 1/2 tbsp. butter
1 tbsp. flour
1/2 c. milk
1/4 tsp. each salt and pepper
Dash nutmeg
1/2 lb. spinach, boiled, strained and chopped
1 tbsp. grated Romano cheese
1 c. flour
1 egg, slightly beaten
2 c. bread crumbs
1 c. olive oil

Cut hard boiled eggs in half; remove and mince yolks. Melt butter in saucepan, blend in flour and add milk slowly, stirring constantly, until thick. Add salt, pepper, nutmeg, spinach, and minced egg yolks to sauce and mix well. Add cheese, pour into dish and let cool. When mixture is cool and firm, fill hard cooked egg whites with it. Roll in flour, then in beaten egg, then in bread crumbs and fry in hot oil until golden in color.
