HOMEMADE VANILLA ICE CREAM
4 eggs
2 c. sugar
2 c. evaporated milk
1 can sweetened condensed milk
2 tbsp. vanilla
1/2 tsp. salt

Beat eggs on high until light, add sugar gradually beating until mixture thickens. Add rest of ingredients and mix. Pour into gallon size ice cream maker and fill the rest of the way up to the line with whole milk (2% works fine too). Can be stored a few hours in the refrigerator until freezing in machine. To add peaches (or other like fruit), wash, peel and cut very small (so as to not stop the paddles in the ice cream maker) about 3 cups. Canned peaches work well too.

I made this with 1 can sweetened condensed milk, no evap milk, and 1 cup heavy whipping cream (plus 1% milk because that was all I had). And then I crushed up 10 oreos and added them. The ice cream was yummy! Quite sweet tasting.

This recipe was perfect and cost effective, whipping cream is so expensive so using the evaporated and sweetened condensed milk was a great substitute and the ice cream is very yummy! Not only is the vanilla version tasty it's a great base for add-ins like sandwich cookies, fresh fruit, etc. Thanks for sharing such a great recipe!

I used this recipe and added 2 smashed bananas. It is SO YUMMY, and it didn't get hard storing leftovers in the freezer. Amazing! I'm going to stick with this recipe from now on.
