GREEN ENCHILADA CASSEROLE 
1 lb. ground beef
1/2 lb. sharp Cheddar cheese
1 lg. onion
Tortillas

Brown beef in pan using no grease. Soften tortillas in hot oil; put meat, grated cheese, and onions in tortillas and roll up. Pour sauce over and bake at 350 degrees for 20 minutes.

SAUCE:

1/2 stick butter
4 tbsp. flour
2 c. milk
1/2 lb. Velveeta cheese
1 sm. can chopped green chilies

Melt butter; slowly add flour and stir to make a paste. Add milk slowly, stirring constantly. Add cheese chunks and chilies and cook until melted. Pour over enchiladas.
