CHIFFONAH'S MEATLOAF ROLL 
A simple favourite! A family meal for all with just the right flavours!

4 oz. ground beef (1/4 pkg.)
2 eggs, divided
1 tsp. oregano
3 shallots, finely diced
2 scallions, finely diced
1 oz. blue cheese
1/2 cup stuffed olives
1/2 cup ketchup (Hunts)
3 pieces crystallized ginger
3/4 cup cream cheese
string cheese, for garnish

Preheat oven to 400°F.

In bowl, mix ground beef, 1 egg and oregano until combined. Add finely diced shallots and scallions. Roll out mixture on rectangular cookie sheet.

Hard boil remaining egg and dice once shelled. Mix egg with diced blue cheese and diced olives.

Process ketchup, ginger and cream cheese until smooth. Spread over beef mixture. Sprinkle with egg, cheese and olive mixture.

Carefully roll meat like sponge roll, and place in greased loaf pan. Arrange pulled string cheese on top.

Bake at 400°F for 40 minutes or until meat is cooked.
