SALMON CROQUETTES 
1 lg. can good red salmon, not drained
1 onion, grated (lg. or sm. depends upon your preference)
1 egg, beaten slightly
1 - 1 1/2 tbsp. lemon juice
Cracker crumbs
Vegetable oil for frying

Combine salmon, onion, egg and lemon juice. It will be "soupy". Just before ready to cook, add cracker crumbs until of consistency to form patties. Very lightly form patties, do not pack. Roll in cracker crumbs just before cooking. Fry in vegetable oil until browned on each side. Serve immediately with lemon juice and/or cocktail sauce. Serves 6. This makes quite a lot. For a smaller amount (to serve 2 to 3), use a small can of salmon and cut other ingredients proportionately. You still need the egg to bind.
