CHEESE PIE 
1 c. brown rice
2 c. water
1 tsp. salt
2 onions (diced)
2 tomatoes (diced)
3-4 tbsp. butter
1 tbsp. basil
8 oz. Swiss cheese
8 oz. Muenster cheese
8 oz. Jack cheese
1 tbsp. flour
3 eggs
3/4 c. half and half

Mix 1 cup brown rice, water and salt. Boil 15 minutes, simmer 45 minutes. saute onions and tomatoes in butter and basil. Toss cheeses together in separate bowl. Cover bottom of pie dish with rice. Layer cheeses, onion, tomato mixture, cheese, etc. until all is used (end with cheese). Top with 3/4 cup half and half mixed with eggs. Cook 45 minutes, 350 degrees.
