CHICKEN SNITZEL 
1 pkg. boneless chicken breast
2 eggs
1 c. crushed Ritz crackers
1 c. crushed saltine crackers
1/2 c. oil
1/2 c. butter, melted

Pound chicken until flat, season, dip in egg and then cracker crumbs that have been mixed together. Fry in oil and butter mixture.
