JAMBALAYA 
1 chicken, stewed and cut into chunks
1 lb. hot pork sausage
1 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped bell pepper
salt and pepper to taste
1 clove garlic, minced
1 1/2 c. long grain rice
1 tsp. Cajun spices
1/2 tsp. Louisiana hot sauce

Brown sausage, onion, garlic, celery and bell pepper together; drain well. Mix with broth from chicken; simmer for 30 minutes. Add rice and chicken; cook until rice is tender. Serve hot.
