SWEET POTATO PUDDING 
2 eggs
3/4 c. sugar
1 1/2 c. milk
1/2 c. butter, melted
2 tsp. vanilla extract
2 c. grated raw sweet potatoes

Beat eggs. Add sugar and beat until light. Add milk, butter, vanilla, a dash of salt, and sweet potatoes. Beat well. Pour into a buttered casserole dish and bake uncovered at 350 degrees for 25 to 30 minutes.
