HERBED RICE AND SPINACH 
4 eggs
2/3 c. milk
1/4 c. melted butter
1/2 c. chopped onion
2 tbsp. chopped parsley
1 tsp. salt
1/2 tsp. thyme
1/2 tsp. nutmeg
2 (10 oz.) pkgs. frozen spinach
2 c. cooked rice
2 c. shredded cheese

Thaw and drain spinach. Beat eggs with milk. Saute onion, parsley, salt, thyme and nutmeg in melted butter. Combine all ingredients except cheese; mix well. Pour into greased casserole dish; top with cheese. Bake at 350 degrees for 45 minutes. Serves 8.
