TURKEY DRESSING 
12 c. bread crumbs - 1 loaf cut in cubes; set aside
1 c. butter
1 1/2 c. chopped celery, stalks and leaves included
1 tbsp. salt (don't salt the turkey)
1 tbsp. dried herbs (sage, thyme, and poultry seasoning)
3/4 c. finely minced onions
1 tsp. pepper

Melt in large heavy skillet, butter. Add onion, 2 cups bread crumbs. Add celery, salt, pepper and herbs. Dump in rest of crumbs. If dry add a little warm water. Put in cavity of turkey.
