TWICE BAKED POTATO 
6 potatoes
1 pkg. Canadian bacon
2 tbsp. sour cream
1 tbsp. melted butter
Salt & pepper
Saute onions, optional
Grated cheese

Bake the potatoes until done. Slice the potatoes horizontally and spoon out the potatoes into a bowl.

Mix together potatoes, bacon, sour cream, butter, salt, pepper, onions and cheese. Fill potato skins with mixture and top with grated cheese. Bake 15 minutes or until cheese is melted and serve.
